Milk fat or Butter fat is the fatty portion of milk. Milk and cream are often sold in many countries according to the amount of butter fat they contain. Most commonly sold milk fats are Butter, Butter oil, Anhydrous Milk Fat (AMF), Ghee.
Butter is a solid dairy product made by churning fresh pasteurized milk. We offer wide ranges of Butter which is obtained from pure cow’s milk. Pure cow butter is often yellow to pale yellow and butter obtained from Buffalo milk is white or off white in colour depending on the feed intake of the animal.
Ghee is clarified butter that has its origins in ancient India and is most commonly used in South Asian countries for many applications. Ghee is prepared by simmering butter or cream and removing liquid residue.
Cream is a dairy product composed of high butter fat layer which is skimmed from top of the milk before homogenization. Cream has high levels of saturated fat. Cream from cow’s milk is usually yellow in colour whereas Buffalo cream is whiter.
Lactose is a disaccharide sugar derived from galactose and glucose found in milk. It is extracted from sweet or sour whey. Usually lactose makes up around 2-8% of the milk. Caseins are a manufactured dairy product by drying a curd to a powder.The curd is dried, usually on a roller dryer or extruder to casein powder. Caseinate is modified acid casein by reacting with a hydroxide like sodium or calcium hydroxide, it has perfect emulsifying capabilities.

Usually Palm based fat or coconut based fats are widely used for fat filled powders. Fat percentage varies from 26 to 28% but protein can be offered from 2% to 26% depending on the economical requirement matching the taste or flavor profile.

Non dairy creamers often termed as tea or coffee whiteners are intended to substitute for milk or cream as an additive to tea or coffee or other beverages. They do not contain lactose and hence called as non dairy creamers. Although might contain casein.
